Loaded Potato Soup

Yields: lots of people!
Ingredients:
3 lb red potatoes, sliced cooked
1 lb bacon bits, real
2 lb chedder cheese
2 qt milk
1 1/2 sticks butter
3/4 c flour, all purpose
1 ea green onions, bunch, chopped
1 tsp white pepper
1/8 c jalepeno juice
1 tbls onion powder
Directions:
1) Melt butter in small sauce pan
2) Add flour--a little bit at a time-- and cook on low to create a roux.
3) Heat milk in a double boiler (or a heavy pot) until a "frothy skum" forms on top.
4) Whip in the roux until desired thickness is achieved.
5) Remove from heat and add cheese--a little bit at a time--until cheese evenly colors the batch.
6) Add previously sliced, then boiled potatoes, chopped onions, and remaining ingredients.
7) Cook on low 15 minutes.

EXTRA: Save a little cheese onions, and backbits for toppings on the individual bowls.
