Strawberry Pie

Yields: 8 servings
Ingredients:
1 cup sugar
1 cup water
1/2 package strawberry jell-o 3 1/2 Tablespoons cornstarch
1 tablespoon lemon juice
few drops of red food coloring (optional)
2 pints strawberries
Directions:
1) Combine the sugar, water, corn starch, jell-o, red food coloring bring to boil.

2) Cook till turns clear and becomes thick Let cool. Add lemon juice.

3) Bake pie crust according to instructions.

4) Cap strawberries, wash and drain on paper towels to get water off.

5) When sugar mixture is cooled, place strawberries in pie shell and pour cooled mixture over, refrigerate 4-5 hours.

6) Optional: Top with whipped topping or cool whip

Hints: The Jell-o brand is better because it has more
red color than other brands. If you use deep dish then you may need to make 1 1/2 recipe of filling.
