Pork Medallions with Grilled Limes

Yields: 4 servings
1 Pork tenderloin(1 1/4 lbs)
4 limes
1 tbsp olive oil
1/2 c loosely packed fresh cilantro leaves (chopped)
1/4 tsp kosher salt
1/8 tsp fresh ground pepper
1) Cut pork tenderloin crosswise into 8 equal pieces. Press firmly on the cut side of each piece to flatten to about 1 in thick.

2) Cut 2 limes in half, save for grilling.

3) From remaining limes, grate 1 tsp peel and squeeze 1/4 c of juice. Combine in bowl with cilantro, salt and pepper and rub on all sides of pork.

4) Grill pork medallions 3 to 4 minutes, then turn for another 3 to 4 minutes or until centers are slightly pink (or done to your likeness) Grill the limes until slightly warm.
